LAMB & MUTTON

Lamb is the meat taken from a young sheep that has been slaughtered in the first year of its life.  Because the animal is young when slaughtered, most cuts are relatively tender and delicate.  The texture and flavor of lamb responds well to marinating, and cuts can be roasted, fried, broiled, grilled, or slow-cooked in moist heat.  Meat from a sheep over one year old is known as mutton; hogget refers to the meat taken from a sheep over two years old.
